What to check before using a protocol

Past hacks: every exploit on record, with the amount and whether funds came back.
Audits: whether it has been audited, and links to the reports.
TVL and its change: deposits falling fast over an hour or a day can mean trouble, sometimes an exploit in progress.
Age, forks and oracles: a week-old fork of another protocol with a single price oracle carries more risk than a mature one.
